Let’s be real, I need a little sunshine right now. By sunshine, I suppose I mean synthetically… through a bright orange carrot ginger smoothie! I’m loving this fall weather but it’s easy to get a little bummed once you combine it with the loss of daylight. Also, for full disclosure, I lost my job last week. They announced layoffs on Monday and we all anxiously waited until Thursday when they came around and let a large portion of us go. It was rough. You don’t realize how much you value the company of some of your coworkers until you suddenly don’t see them everyday. I’m sure this will provide me with a better opportunity in the future, but that didn’t stop me from a little emotional eating binge on last week’s peanut butter cups. For redemption I’ve been trying to have more salads and smoothies.
Anyway, back to the point, Smoothies. We all know smoothies are a great way to get a large portion of your daily fruits and veggies. I know that to some of you smoothies with veggies can seem gross. Visually, if you mix greens with reds, I can see your point… they can look pretty gross at times. However, since this smoothie uses carrots instead of leafy greens, the color will not be distorted! Bright orange I promise!! Carrots work so well in smoothies. I love adding them to any orange or tropical smoothies. The carrot flavor is subtle and goes well with the lemon and orange flavor.
When it comes to adding ginger, you might be tempted to just use the powdered spice you have in your pantry. You can… but I swear the flavor is SO much better using fresh! If you have no idea how in the world you’ll use a whole knobbly root of ginger, I’ve got some advice!! Take the root you buy from the store and peel it. Cut it into approximate tablespoons, just use your best judgement, put the ginger into a freezer safe bag or container and put it in the freezer. Now anytime you want to make a smoothie with ginger, you’ve got fresh stuff on hand! Worth it!
- 3/4 Cup Water
- 2 Oranges
- 1 Apple
- 2-3 Carrots
- 2-3 Tbsp Lemon Juice
- 1 Tbsp Ginger
- 5-7 Ice Cubes
- Cut the peel off of the oranges
- De-seed the apple
- Peel the carrots and ginger
- Put all ingredients in the blender and blend until smooth.
