What’s shakin’? My name’s KJ and you probably want to know a little more about the lady behind these posts so here’s a little about me to get you intrigued!
I started my life out as your normal Omnivore eating whatever was on the dinner plate [except for those gross vegetables – like green beans] just like most kids. I have always been slightly intolerant of dairy, so I didn’t drink a ton of milk but cheese was totally still on the table [how would a young’n survive without pizza?]. It wasn’t until I was about 14 years old when I was at the barn and I saw the resident farm dog eating a small animal that I considered if I should really be eating them myself. I secretly changed to vegetarian, afraid to tell my parents, who often served meat with a side of veggies and a starch [almost every day], because I didn’t want my experiment to inconvenience them. My parents are not dumb, so it didn’t take them long to realize I was skipping the meat and I told them I’d gone vegetarian. I can’t remember exactly how long this lasted, but it couldn’t have been more than 4-6 months. I didn’t know how to properly be vegetarian causing me to fall into poor habits often having pop-tarts, cereal, and countless boring meatless burgers. I eventually gave in and went back to Omnivore
Once I was in college I [unconsciously] started phasing meat out of my diet. I couldn’t stand chicken, I wasn’t a pork chop fan, steak was a rare occasion, but I was still including fish, venison, hamburgers, deli meat even if it was only about 2-3 times a week. Fast forward to when I moved out and got married –> At this point I [along with my husband] were in charge of our own pantry and meals! I was no longer going to inconvenience anyone with my experiments… except maybe my husband from time to time. I started collecting vegan cookbooks and we’d try out the recipes sometimes subbing in some dairy or meat from time to time. We figured out, these crazy vegan dishes are not so bad and often times not too crazy either! Soon we had plenty of favorites!
TIME FOR CHANGE
My entire life I’ve struggled with horrible digestion but could never quite figure out why. In early 2015 I decided, “I’ve only dabbled in veganism but never quite committed to it..” so I went 40 days without any animal products [to the best of my knowledge] except for honey. If you want to get critical, I’m not a strict vegan because I include honey, and that’s OK with me. Anyways, during the 40 days I felt tremendously better, my workouts were going better, and my skin was clearer! When the 40 days were up I tried a few small things like a slice of bread with butter, Easter peeps, and M&Ms but none of these things were quite as satisfying as I’d remembered and my face broke out like it was nobody’s business. Everybody’s got their struggles and their bad days and that’s OK, the effort and intent are what matters most. No one has to be perfect!
This space is here to share my recipes and journey with you guys and how I feel when I’m on top of my diet but also share the challenges and [what we may deem] “failures” of trying to be vegan. In addition to my journey, I also want to share my love of bright hair and traveling with you too!
