On the weekends I love waking up and making a nice breakfast. There’s just something special about a slow morning with the sunlight pouring in through the windows, a warm mug of steamy coffee in my hands, and the best conversations with my husband. Oddly enough, breakfast is probably the only meal that we use our dinning table for (although not all the time). I’m not entirely sure why we own a dinning table…
Slow mornings can be such a great time to reflect on yesterday and prepare for a new day – or in this case reflect on this past year and dream about the new year. When the year first started off I had blue hair, I was working a normal/typical job, I wasn’t fully vegan, I had only been truly climbing for 8 months, I was a lousy runner, and this blog here was only a vision in my head. As I close out 2015, my vibrant hair color is nothing more than a washed out memory (hopefully not for long), I am unemployed, I am vegan, I am working on my lead climbing certification, I am running 3 miles regularly (completed my first 10K), and the blog dream has turned into a real life thing! A lot of things have happened in my life this year – some things I had planned and other things that I had never anticipated. All these things have lead me to where I am now, and right now I am currently happy and fairly content with my life – what more could I really ask for?
I want to thank you for reading, sharing, and supporting Om Nom Herbivore!! As with any new adventure, there is always fear and anxiety. When I started off taking a “Zero to Blog” class by Regina in April, I couldn’t help but wonder – “Would anyone read my blog?”, “What makes me any better than any other Vegan blogger out there?”, and “Will I be able to create enough awesome recipes that people enjoy??”. When it comes down to it you just have to commit. In the end, I would have regretted not trying far more than trying and failing. This blog is by no means a huge ground-breaking success yet, but it’s slowly and surely growing. That growth can be attributed to you. Thank you!
OK, let’s get back to this oatmeal shall we?? Peanut butter may sound like kind of a heavy ingredient to add to oatmeal. As long as you don’t over do the measurements, I promise it is a great addition to oatmeal! This peanut butter banana oatmeal packs all the right ingredients you need to start your day off on the right foot: Protein, Fruit, and Carbs!! Woo!! The recipe below is for two cooked on the stove, but you can totally halve it and make it in the microwave!
- 1 ripe banana
- 1 1/4 cup almond milk
- 1 cup old fashioned oats
- 2 Tbsp. Peanut butter
- 2 tsp. Maple Syrup (or brown sugar)
- Mash the banana in a small sauce pan
- Add almond milk
- Bring the mixture to a boil
- Add the oats and reduce heat to medium
- Cook for about 5-7 minutes
- Add in peanut butter and maple syrup
- If the mixture seems a little thick add a little more almond milk
- Divide into 2 bowls and top with banana slices and walnuts if desired
