Pumpkin + Cocowhip = amazing pumpkin fluff!! I can’t take full credit for this recipe, although it is doctored to now be vegan. A few years ago my mom came home with a recipe she’d received from a friend and she whipped up this amazing, fluffy, and sweet treat!! You’re supposed to wait for this fluff to freeze up either in a tub or in popsicle molds, but honestly this fluff is amazing at room temp right off the beaters!! Another great thing about this recipe is that it only takes about 5 minutes to make! Just make sure to let the Cocohip thaw for just a few minutes before mixing so its easier to blend.
Don’t tell me you don’t want to like those beaters!!
At first, I was leery I couldn’t recreate this recipe because it has pudding in it. I guess I thought pudding had something weird/non-vegan in it. Jell-O brand pudding mix has a ton of ingredients in it… most of which I had no idea what they were so I just went with the a simple package that I found at Whole Foods (see picture below). It only contained 3 organic ingredients: contained sugar, vanilla, and cornstarch. This one I could check off as vegan!
I’ve tried this recipe with a few vegan cool-whips and So Delicious’ Cocowhip has been the best! So Delicious has some of the best vegan dessert products (seriously if you haven’t tried their Cashew Milk Salted Caramel Cluster… get on that)!! Since this version uses a coconut based cool whip, its takes quite a bit more spices than its non-vegan counter part did to really make the pumpkin pop! FYI Whole Foods carries a TruWhip. At first glance, I thought this was vegan but it’s not. TruWhip contains sodium caseinate which is the biochemical name from casein and casein is a protein found in milk. Blehh!!
If you choose to make this in a tub and serve it like ice cream, you’ll want to take it out of the freezer for about 10 minutes before hand to let it thaw. Its quite hard if you just pull it out of the freezer and try to spoon it out.
- 9 oz. Cocowhip
- 15 oz. can Pumpkin Puree
- 1.5 oz. package of Vanilla Pudding Powder
- 1 tsp. Pumpkin Pie Spice
- 1/2 tsp. Cloves
- 1/2 tsp. Nutmeg
- 1/4 tsp. Cinnamon
- Place all ingredients in a bowl and beat with beaters until well combined
- Put mixture into a bowl or popsicle mold and let set up in the freezer
